Ingredients
- 1 cup Poha (flattened rice)

- 1/4 cup peanuts

- 1/4 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1 tbsp oil
- Salt to taste

Directions
- Rinse the poha in a strainer and let it rest for a few minutes to soften.
- Heat oil in a pan and add mustard seeds and cumin seeds. Let them splutter.
- Add the chopped onion, peanuts, and potatoes (if using) and sauté until the onion turns translucent.
- Add turmeric powder and salt, and mix well.
- Add the softened poha to the pan and mix well. Sauté for 3-4 minutes until everything is well combined.
- Garnish with chopped cilantro and serve hot.
