  • 6 croissants, torn into small pieces
  • 1 pound breakfast sausage
  • 2 cups Gruyère cheese, shredded
  • 6 large eggs
  • 2 cups whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 green onions, finely chopped


  1. In a large skillet, cook the breakfast sausage over medium heat until browned, breaking it up into small pieces as it cooks.
  2. In a large bowl, whisk together the eggs, whole milk, salt, and black pepper.
  3. Add the torn croissants, cooked sausage, and shredded Gruyère cheese to the egg mixture and stir to combine.
