Yorkville Sons of The American Legion's Final Monthly Breakfast Fundraiser

Breakfast Buffet Menu

Ingredients:

  • 1 lb biscuits
  • 1 lb ground pork
  • 2 cups milk
  • 1/2 cup flour
  • 8 large eggs
  • 1/4 cup water
  • 1/4 cup diced onions
  • 1/4 cup diced green peppers
  • 1/2 cup diced ham
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups buttermilk
  • 2 cups shredded sharp cheddar
  • 1/2 cup diced cooked bacon
  • 2 tablespoons chopped fresh chives
  • 4 large russet potatoes
  • 1/4 cup melted butter
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 16 oz tomato juice
  • 16 oz orange juice
  • 16 oz milk
  • 16 oz coffee

Directions:

  1. For the biscuits and gravy, preheat oven to 400 degrees F. In a skillet, brown pork over medium heat until fully cooked, stirring frequently. Add flour to skillet and stir until well combined with the pork. Slowly add milk, stirring constantly. Bring mixture to a boil, then reduce heat and let simmer for 10 minutes while stirring occasionally. Prepare biscuits according to the package directions. Serve hot gravy over warm biscuits.
  2. For the omelets, whisk together eggs and water in a medium bowl. In a large nonstick skillet, cook onions, peppers, and ham over medium-high heat until vegetables are tender and ham is lightly browned. Pour egg mixture over vegetables and ham. As eggs begin to set, lift the edges of the omelet and let uncooked egg flow beneath the set edges. When eggs are almost set, fold omelet in half and serve hot.
  3. For the pancakes, mix together flour, sugar, baking powder, baking soda, and salt in a large bowl. Add buttermilk, cheese, bacon, and chives. Stir until well combined. Preheat griddle or skillet over medium-high heat and grease with butter. Drop batter by large spoonfuls onto griddle or skillet and cook until golden brown on each side. Serve hot.
  4. For the potatoes, preheat oven to 450 degrees F. Wash and dice potatoes into small pieces. In a large bowl, mix together melted butter, smoked paprika, garlic powder, and cayenne pepper. Add potatoes to bowl and toss until well coated. Spread potatoes on a baking sheet in a single layer and bake in preheated oven for 20 minutes or until crispy and golden brown. Serve hot.
  5. For the beverages, simply pour tomato juice, orange juice, milk, or coffee into a glass or mug and serve chilled or hot.
