Mashed Plantains with Eggs Recipe

Eggs and potatoes are a breakfast classic, but have you ever tried pairing your eggs with mashed plantains? This recipe puts a tropical twist on a traditional breakfast dish, adding a sweet and earthy flavor to your eggs. Here's what you'll need:

Ingredients:

  • 2 ripe or green plantains
  • Water
  • 1 tablespoon of butter or olive oil (optional)
  • 2-4 tablespoons of milk or heavy cream (optional)
  • Salt and pepper to taste
  • Suggested toppings: cheese, avocado, sauteed onions, garlic powder, chili powder

Directions:

  1. Peel the plantains and chop into small pieces.
  2. Bring a pot of salted water to a boil and add the plantain pieces. Cook until tender, about 10-15 minutes depending on the ripeness of the plantains.
  3. Drain the plantains and add them to a bowl. Mash with a fork or potato masher.
  4. Optional: Add 1 tablespoon of butter or olive oil and 2-4 tablespoons of milk or heavy cream to the mashed plantains for a creamier texture. Stir in salt and pepper to taste.
  5. Serve the mashed plantains as a bed for your favorite style of eggs - over easy, poached, etc. You can also top with cheese, avocado, sauteed onions, garlic powder, chili powder, or any other toppings that sound delicious to you.

Enjoy your savory and slightly sweet breakfast dish!
