The Ultimate Healing Chicken and Rice Soup

If you’re feeling under the weather, this soup is just what the doctor ordered. Packed with healing ingredients like turmeric, ginger, garlic, and bone broth, it’s the perfect comfort food to help fight off whatever ails you.


  • 2 tablespoons avocado oil
  • 1 onion, diced
  • 3 celery stalks, diced
  • 3 carrots, peeled and diced
  • 8 cups chicken bone broth
  • 1 pound boneless, skinless chicken breasts or thighs, diced
  • 1 teaspoon crushed red pepper
  • 1 teaspoon black pepper
  • 1 teaspoon salt (or to taste)
  • Juice from 1 lemon
  • 1 cup brown long-grain rice (or white basmati for a quicker cook time)
  • 1 cup kale, chopped (stems removed)
  • Green onions, chopped (for garnish)


  1. Heat the avocado oil in an 8-quart stock pot over medium heat until hot.
  2. Add the diced onion, celery, and carrots to the pot and cook for about 5 minutes or until the vegetables are soft.
  3. Add the chicken bone broth and bring to a soft boil.
  4. Add the diced chicken, crushed red pepper, black pepper, salt, and lemon juice to the pot.
  5. Remove 1/2 cup of the broth from the pot and mix with 1 tablespoon of cornstarch until dissolved. Add the mixture back into the pot to thicken the soup.
  6. Add the brown rice and continue to cook until it’s fully cooked, which should take around 45 minutes. If using white basmati rice, cook for only 20 minutes.
  7. Add the chopped kale and stir. Leave in the soup for a couple of minutes before serving.
  8. Serve hot and top with chopped green onions for garnish.
