Who says you can't have peach pie for breakfast? This easy and nutritious recipe is like having peach pie, but better for you! Made with rolled oats, fresh peaches, and sweetened with maple syrup, it's a wholesome breakfast or brunch option that the whole family will enjoy.   • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • dash of salt
  • 2 cups sliced peaches
  • 1 1/2 cups milk
  • 2 egg whites
  • 1 teaspoon vanilla extract
  • 1/4 cup maple syrup
  • 1/4 cup chopped nuts (optional)


  1. Preheat oven to 375°F and lightly grease an 8x8 inch baking dish.
  2. In a large bowl, mix together the oats, baking powder, pumpkin pie spice, cinnamon, and salt.
  3. Add the sliced peaches to the dry mixture and stir to combine.
  4. In a separate bowl, whisk together the milk, egg whites, vanilla extract, and maple syrup. Pour the wet mixture over the dry mixture and stir until well combined.
