Recipe for Summer Pasta Salad

Celebrate the start of summer with this light and refreshing pasta salad!

Ingredients:

  • 1 pound fusilli pasta
  • 1 pint cherry tomatoes, halved
  • 1 large cucumber, diced
  • 1 cup fresh basil leaves, chopped
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste

Directions:

  1. Cook pasta according to package directions until al dente. Drain and rinse under cold water until cool.
  2. In a large mixing bowl, combine the pasta, cherry tomatoes, cucumber, and basil.
  3. In a separate bowl, whisk together the red wine vinegar, olive oil, garlic, and Dijon mustard. Season with salt and pepper to taste.
  4. Pour the dressing over the pasta salad and toss well to combine.
  5. Cover and refrigerate for at least 30 minutes before serving. Enjoy!
