Recipe for Summer Pasta Salad
Celebrate the start of summer with this light and refreshing pasta salad!
Ingredients:
- 1 pound fusilli pasta
- 1 pint cherry tomatoes, halved
- 1 large cucumber, diced
- 1 cup fresh basil leaves, chopped
- 1/4 cup red wine vinegar
- 1/2 cup olive oil
- 2 garlic cloves, minced
- 1 teaspoon Dijon mustard
- Salt and pepper, to taste
Directions:
- Cook pasta according to package directions until al dente. Drain and rinse under cold water until cool.
- In a large mixing bowl, combine the pasta, cherry tomatoes, cucumber, and basil.
- In a separate bowl, whisk together the red wine vinegar, olive oil, garlic, and Dijon mustard. Season with salt and pepper to taste.
- Pour the dressing over the pasta salad and toss well to combine.
- Cover and refrigerate for at least 30 minutes before serving. Enjoy!
