Easy Lentil Soup

This lentil soup recipe is a simple and delicious way to enjoy legumes as part of a balanced diet. It's perfect for meal prep and makes a satisfying lunch or dinner. Even better, it's budget-friendly and requires only seven ingredients (excluding salt and water).


  • 1 tablespoon olive oil
  • 2 stalks celery, chopped
  • 2 carrots, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups water
  • 1 1/2 cups green or brown lentils
  • 1 teaspoon cumin
  • Salt, to taste


  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the celery, carrot, onion, and garlic and sauté for 5 to 6 minutes until tender.
  2. Add the water, lentils, and cumin. Bring to a simmer and simmer for 30 minutes until the lentils are tender.
  3. Add the additional 1/2 to 1 cup of water as needed. Taste and add additional salt to taste.
  4. Serve immediately or refrigerate for meal prep. The soup lasts up to 1 week refrigerated and leftovers taste even better (you can also freeze them for up to 3 months). Leftovers may absorb extra broth, so you can add a splash of water and pinch of salt if the texture becomes too thick.

This lentil soup is a template recipe that you can customize based on your preferences. You can try adding different spices like curry powder, dried tarragon, or dried oregano. You can also add garnishes like freshly ground black pepper, grated Pecorino cheese, Greek yogurt, or cashew cream (to keep it vegan).
