Healthy and Delicious Breakfast Bars Recipe

Jenna, along with Mercedes, shows us how to make a healthy and delicious breakfast bar recipe that her family loves. Not only is it a treat, but it's also very healthy, making it an excellent breakfast option for all ages. The recipe is straightforward and can be made in a few minutes, making it a perfect fit for any busy morning. All the ingredients needed for this recipe can be found at your local Tops store, and if you're too busy to visit the store, you can always shop online to fulfill all your grocery needs.


  • 2/3 cup wheat flour
  • 1 cup quick cooking oats
  • 1/2 cup coconut sugar
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup coconut oil (melted and cooled) *can substitute with unsalted butter*
  • 1 egg (room temperature)
  • 1 tsp pure vanilla extract
  • 2 tbsp milk (vanilla almond milk recommended)
  • 1/4 cup white chocolate chips
  • 1/4 cup white chocolate chips (melted)
  • 1/4 cup dried cranberries (less sugar added recommended)


  1. Preheat oven to 350F and grease an 8×8 inch baking pan with cooking spray.
  2. In a bowl, combine the wheat flour, quick cooking oats, coconut sugar, baking soda, and salt. Mix well.
  3. Add the melted and cooled coconut oil (or unsalted butter), egg, pure vanilla extract, and milk to the dry ingredient mixture. Mix until everything is fully incorporated.
  4. Add the white chocolate chips and dried cranberries to the mixture and mix them in well.
  5. Pour the batter into the prepared baking pan and spread it evenly with a rubber spatula.
  6. Bake for 14-18 minutes or until golden brown. Let the oatmeal bars cool before cutting them into your desired size. We suggest cutting them into 16 squares.
  7. Drizzle the last 1/4 cup of white chocolate chips and enjoy!
