Ingredients:

  • 1/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup unbleached all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground mace
  • 1/2 teaspoon ground ginger
  • 6 tablespoons (3/4 stick) cold unsalted butter, cut into pieces
  • 2 cups (8 ounces) pecans, coarsely chopped
  • 1/2 cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups unbleached all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk

Directions:

  1. Preheat oven to 350 degrees.
  2. Line the bottom of an 8-inch springform pan or 2-inch-deep removable-bottom tart pan with parchment paper and grease the sides.
  3. To make the topping, combine the sugars, flour, and spices in a small bowl or work bowl of a food processor fitted with a metal blade.
  4. Cut in the butter with your fingers, or pulse on/off if using a food processor, until the mixture forms coarse crumbs. Do not overprocess or the mixture will turn into dough.
  5. Add the chopped pecans, mix, and set aside.
  6. In a separate bowl using a wooden spoon or in the bowl of a heavy-duty mixer, cream the butter and sugars together.
  7. Add the eggs and vanilla, beating until smooth.
  8. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  9. Add the flour mixture and buttermilk to the creamed mixture in small batches, alternating between the two, until the batter has a creamy consistency.
  10. Scrape half of the batter into the prepared pan.
  11. Sprinkle evenly with half of the topping.
  12. Spoon the remaining batter over the top and sprinkle with the remaining crumb topping.
  13. Bake in the center of the preheated oven until a cake tester inserted in the center comes out clean, about 45-55 minutes (baking times can vary depending on the type of pan).
