Breakfast Noodles with Pork and Chive Dumplings
If you're in the mood for a breakfast that's both savory and filling, Chef Jon Kung's breakfast noodles with crispy pork and chive dumplings might be just what you need! This recipe comes from his book "Kung Food: Chinese American Recipes from a Third Culture Kitchen."
Ingredients:
- 8 oz. fresh egg noodles
- 2 tbsp. vegetable oil
- 4-5 oz. ground pork
- 1 tsp. cornstarch
- 1 tbsp. Shaoxing wine or dry sherry
- 1 tbsp. soy sauce
- 1 tbsp. oyster sauce
- 1/2 tsp. sugar
- 1/4 tsp. white pepper
- 1/2 cup chopped chives (Chinese chives preferred)
- 2 tbsp. vegetable oil
- 3-4 cloves garlic, minced
- 2 tbsp. soy sauce
- 1 tbsp. chicken broth or water
- 1 tsp. sugar
- 1/4 tsp. white pepper
Directions:
- Cook the noodles according to package instructions. Drain and set aside.
- In a bowl, mix together the ground pork, cornstarch, Shaoxing wine, soy sauce, oyster sauce, sugar, white pepper, and chives.
- Heat 2 tablespoons of vegetable oil in a nonstick pan over medium-high heat. Form small balls of the pork mixture and flatten slightly into dumpling shapes. Cook the dumplings until crispy and golden, about 2-3 minutes per side. Remove from the pan and set aside.
- In the same pan, add another 2 tablespoons of vegetable oil. Add the minced garlic and cook until fragrant, about 30 seconds.
- Add the cooked noodles to the pan and toss to coat in the garlic and oil.
- In a separate bowl, mix together the soy sauce, chicken broth or water, sugar, and white pepper. Pour over the noodles and toss to coat evenly.
- Plate the noodles and top with the crispy pork and chive dumplings. Serve hot and enjoy!
