Grilled Watermelon and Beef Salad Recipe
Summer is all about fresh and delicious ingredients. This recipe combines the sweetness of watermelon with the savory flavors of beef to create a unique and refreshing salad. Perfect for a summer get-together!
Ingredients
- 1 pound beef sirloin or strip steak
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 4 slices of watermelon, cut into 1-inch thick squares
- 4 cups arugula
- 1/2 cup crumbled feta cheese
- 1/2 cup grape tomatoes, halved
- 1/2 medium red onion, thinly sliced
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Directions
- Combine coriander and cumin in a small bowl. Rub evenly onto both sides of the steak.
- Heat grill to medium-high heat.
- Place the steaks in the center of the grill and surround with watermelon slices.
- Grill steak for 10-14 minutes or until desired doneness, flipping occasionally. Grill watermelon for 2-4 minutes or until grill marks form, flipping once.
- Let steak and watermelon rest for 5 minutes.
- While waiting, combine arugula, olive oil, and balsamic vinegar in a large bowl and toss to coat.
- Divide arugula evenly among four plates.
- Slice the steak thinly and add it and watermelon to each plate on top of the arugula.
- Sprinkle cheese, tomatoes, red onion, salt, and pepper as desired.
- Serve and enjoy!
