Cheesy Pepper-Topped Breakfast Enchiladas Recipe

Ingredients
- 8 large eggs, beaten
- 1/4 cup milk
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cheddar cheese, shredded
- 1/2 cup red bell pepper, diced
- 1/2 cup green bell pepper, diced
- 8 small flour tortillas
Directions
- Preheat oven to 375°F.
- In a large bowl, beat eggs, milk, salt, and pepper. Add shredded cheddar cheese, red bell pepper, and green bell pepper. Mix together.
- Divide mixture evenly among 8 tortillas, roll up tightly, and place seam side down in a lightly greased baking dish.
- Bake for 20-25 minutes or until eggs are set and tortillas are slightly browned.
- Serve hot.
