Pyaz ka Poha Recipe with Nutritional Enhancements

Ingredients:
- 1 cup flattened rice (poha)
- 1 tablespoon oil
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1 pinch of asafoetida
- 1 chopped onion
- 1 chopped tomato
- 1 green chilli, chopped
- 1 teaspoon turmeric powder
- Salt to taste
- 1 tablespoon farsan
- 1 teaspoon Jeeravan Masala
Directions:
- Wash the flattened rice in water 2-3 times and drain out the water.
- Heat oil in a pan. Add mustard seeds, cumin seeds, and asafoetida.
- Add chopped onions, green chilli, and sauté until golden brown.
- Add chopped tomatoes and turmeric powder. Cook until the tomatoes become soft.
- Now, add the washed flattened rice and mix well.
- Add salt to taste and farsan. Mix gently.
- Cook for 2-3 minutes on medium heat, stirring occasionally.
- Sprinkle Jeeravan Masala on top and mix well.
- Cover and cook for another minute.
- Switch off the flame and let the Poha rest for 2 minutes.
