Ingredients

  • 4 English muffins, split in half
  • 8 slices of Canadian bacon or ham
  • 8 eggs

  • 3 egg yolks

  • Pinch of cayenne pepper
  • Salt and pepper to taste

Directions

  1. First, toast the English muffins and keep them warm.
  2. Heat a skillet over medium heat and fry the Canadian bacon or ham until slightly crispy. Keep warm.
  3. Fill a large saucepan with at least 2 inches of water and bring to a boil. Reduce heat to simmer and add a tablespoon of vinegar.
  4. Crack an egg into a small bowl or ramekin. Lower the bowl into the water, then use a spoon to swirl the water around the egg. Repeat with remaining eggs, adding no more than four at once.
  5. Cook the eggs for about 3 minutes or until the whites are set but the yolks are still runny. Use a slotted spoon to remove the eggs and dab with a paper towel to remove excess water.
