Surf and Savor in Punta Hermosa Peru: A Perfect Blend of Waves and Cuisine on SURFER Magazine

Weekly "Foodie Friday" Series: First We Surf Then We Eat

Get ready for a colorful, healthy salad that is both elegant and simple. The Alto Pico Salad is a must-try at the Trattoria Don Angelo, a Peruvian restaurant known for its Chinese dishes. This salad is built around foods native to Peru like tomatoes, artichoke hearts, asparagus, pink peppercorns, and pink mountain salt. The warm spring water used to make this salt seeps into terraced salt ponds and crystallizes the salt, giving it a unique taste that is worth the effort to find it.

Ingredients:

  • 2 large tomatoes, sliced
  • 1 bunch of asparagus, cooked and chilled
  • 1 avocado, sliced
  • 1 can of artichoke hearts, drained (reserve 1/4 cup of artichoke oil)
  • 1 head of butter lettuce, torn into bite-sized pieces
  • 1/4 cup of vinegar
  • Pink mountain salt and freshly cracked pepper to taste

Directions:

  1. Take a large oval platter and place tomato slices around the edge of the platter, alternating asparagus spears between tomatoes with the tips facing outwards.
  2. Place the sliced avocado and artichoke hearts on top of the tomatoes.
  3. Mound the butter lettuce in the center of the platter.
  4. Drizzle about 1/4 cup of the reserved artichoke oil and 1/4 cup of vinegar over the tomato, avocado, and artichoke mixture.
  5. Sprinkle with pink mountain salt and a heavy dose of freshly cracked pepper to taste.
  6. Serve and enjoy!
