Steamed Whole Seabass in Chili Bean Sauce

Ingredients:

  • 1 whole seabass (about 2 lbs.), gutted and scaled
  • 1 tbsp. ginger, sliced
  • 3 cloves garlic, sliced
  • 1 tbsp. chili bean sauce
  • 1 tbsp. rice wine
  • 2 stalks scallions, sliced
  • 2 tbsp. vegetable oil
  • Salt to taste

Directions:

  1. Score the fish on both sides.
  2. Stuff the fish cavity with ginger and garlic.
  3. In a small bowl, mix chili bean sauce, rice wine, and vegetable oil.
  4. Spread the sauce mixture over the fish evenly.
  5. Steam the fish for about 30 minutes, until the meat flakes easily with a fork.
  6. Garnish with scallions and serve.

Bacon and Red Cabbage Fried Rice

Ingredients:

  • 4 cups cooked rice, chilled
  • 6 slices of bacon, diced
  • 1/2 red cabbage, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp. vegetable oil
  • 2 tbsp. soy sauce
  • Salt and pepper to taste

Directions:

  1. Heat up a wok or large frying pan over medium-high heat.
  2. Add diced bacon and cook until crispy.
  3. Add sliced onion and minced garlic. Stir-fry until fragrant and tender.
  4. Add sliced red cabbage and stir-fry until slightly wilted.
  5. Add the chilled rice and stir-fry until heated through.
  6. Add soy sauce, salt, and pepper to taste.
  7. Transfer to a serving dish and serve.
