Monday Night Football Match-up Recipe: Philly Cheesesteak Quesadillas

Description:

This Philly-inspired dish is a fusion of two classics, the cheesesteak and the quesadilla.

Ingredients:

  • 1 lb. thinly sliced sirloin steak
  • 1 green pepper, sliced
  • 1 onion, sliced
  • 8 oz. Provolone cheese, shredded
  • 4 flour tortillas
  • 2 tbsp. vegetable oil
  • Salt and pepper to taste

Directions:

  1. Heat oil in a large skillet over medium-high heat.
  2. Add sliced steak and cook until browned on both sides, then remove from the pan and set aside.
  3. Add sliced green pepper and onion to the pan and cook until softened.
  4. Return the cooked steak to the skillet and mix with the veggies.
  5. Lay out the tortillas on a clean surface and divide the steak and veggie mixture among them, placing it on one half of each tortilla.
  6. Sprinkle shredded Provolone on top of the steak and veggies, then fold the other half of the tortilla over to enclose the filling.
  7. Cook each quesadilla for 2-3 minutes on each side, or until the cheese is melted and the tortilla is crispy.
  8. Serve hot and enjoy while watching the Philadelphia Eagles face the Kansas City Chiefs tonight!
