Ingredients:

  • 2 green plantains
  • 4 tablespoons of butter or margarine
  • 1/2 cup of pickled red onions
  • 4 slices of Dominican salami
  • 4 slices of queso de freir (frying cheese)
  • 4 eggs

Directions:

  1. Peel the green plantains and slice them into small pieces.
  2. Boil them in a pot of water until they are soft, about 10-15 minutes.
  3. Remove the plantains from the pot and place them in a bowl with 4 tablespoons of butter or margarine.
  4. Mash the plantains and butter together until you have a smooth mixture.
  5. In a frying pan, cook the Dominican salami and queso de freir over medium heat until they are golden brown on both sides. Remove them from the pan and set them aside.
  6. In the same pan, fry the eggs to your desired consistency.
  7. On a plate, place a few scoops of the mashed plantains. Top them with the pickled onions, the Dominican salami, the fried cheese, and the fried eggs.
