Cinnamon-Scented Icebox Cake - The Best Recipe!

Creamy No-Bake Chocolate and Vanilla Pudding Cake

Get ready to be showered with compliments because this no-bake treat is just that good. Layers of cinnamon graham crackers, chocolate pudding, and vanilla pudding come together to create a delectable "cake" that needs an overnight rest in the fridge to set. It's then finished with whipped cream and a dusting of cocoa powder and cinnamon for the perfect dessert.

  • 14-16 cinnamon graham crackers
  • 1 package (5.9 ounces) instant chocolate pudding mix
  • 1 package (5.1 ounces) instant vanilla pudding mix
  • 3 cups whole milk
  • 2 cups heavy cream
  • 1/2 cup confectioners' sugar
  • 1/4 teaspoon salt
  • 1 tablespoon unsweetened cocoa powder
  • 1/4 teaspoon ground cinnamon

  1. In a bowl, whisk together the chocolate pudding mix and 1 1/2 cups of the whole milk until thickened. In another bowl, whisk together the vanilla pudding mix and the remaining 1 1/2 cups of whole milk until thickened.
  2. In a 9-by-13-inch baking dish, arrange one layer of cinnamon graham crackers on the bottom, breaking them into pieces as needed to cover the entire dish (6 to 7 crackers total).
  3. Spread the chocolate pudding evenly over the graham crackers.
  4. Arrange another layer of graham crackers over the chocolate pudding, breaking them into pieces as needed (7 to 8 crackers total).
  5. Spread the vanilla pudding evenly over the graham crackers. Cover the dish with plastic wrap and refrigerate overnight, or for up to 2 days, to allow the pudding to set.
  6. When ready to serve, use an electric mixer to whip the heavy cream, confectioners' sugar, and salt together until soft peaks form, about 1 to 1 1/2 minutes.
  7. Spread the whipped cream evenly over the vanilla pudding.
  8. Using a fine-mesh sieve, dust the cocoa powder and cinnamon over the whipped cream.
  9. Slice and serve the pudding cake cold.
