
Creamy Tomato Soup Recipe

Ingredients
- 2 cans of diced tomatoes
- 1 cup heavy cream
- 1/2 onion, chopped
- 2 cloves of garlic, minced
- 2 cups chicken or vegetable broth
- 2 tbsp. olive oil
- 1 tsp. dried basil
- Salt and pepper to taste
Directions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic to the pot and cook until onion is translucent, about 5 minutes.
- Add diced tomatoes, chicken or vegetable broth, dried basil, salt, and pepper to the pot.
- Simmer for 20-25 minutes until tomatoes are softened.
- Use an immersion blender or transfer the soup to a blender and blend until smooth.
- Return the soup to the pot and stir in the heavy cream.
- Simmer for an additional 5-10 minutes until heated through.
- Serve hot and enjoy!
